Then all the hotfixes would occur after/during the weekends raids, and the addon developers wouldn’t be able to catch up.
(Actually, back in the “good old days”, patches and downtime were often early morning U.S. time on a Friday. Unfortunately this was prime Oceanic raiding/instancing time. Thank god for Tuesday maintenance).
They nerfed toons to increase difficulty
Why make the bosses harder when they could just reduce your power by one level each patch.

Heal the boss anyone?
Pyroblast to the back of the healers head?
Bosses joined forces and tried to get the major city invasion achievements.
How many raid groups would be required to save Thrall?

Durability damage was permanent
So you were constantly raiding, grinding and crafting to maintain, let alone improve your gear.
It would keep crafters employed, but everyone broke.
Polymorph was permanent
Fancy tanking as a sheep, healing as a Penguin or dps’ing like a pig?
Some factions swapped sides
One day you logged on to find the Forsaken had joined the Alliance and the Night Elves had made peace with the Blood Elves
Your toon knocked on YOUR door one day with the intention of making you do a ghost run.
How many times have you needlessly killed your toon?
What if it came seeking revenge?
What if it formed a raid and laid waste to your neighborhood?
You woke up one day as your toon
How would you explain that to your boss?
(high pitched voice) Sorry boss, I can’t come in today, I am feeling a little short and Arcane.
(deep voice) Mooooo, Sorry boss, but Mooooo, I need the day to graze.
Warlock’s demons enslaved the Warlocks.
Then cackling with glee, sacrificed the Warlocks for a 10 minute buff.

Yeah Rocket boots are the right idea… I would love to see it with Mechanostriders (obviously not permanent), and other mounts… Imagine riding through the mobs when you trusty steed starts bucking like a.. a.. horse bucking… maybe it’s the smell of blood?
A Mage desperately casts slowfall, only to see feathers falling by “his” side… well, until he plummets to the ground…
Forget the faction leaders. What if…
…the bosses said “Screw this! I’m tired of getting killed. I’m not waiting for the next group to come.” Then proceeded to round up all the other bosses and do their own raid targeting raiders in Dalaran?
